3. Shaping from the semi-solid state

Shaping a product from a semi-solid jelly can be done in a number of ways, depending on the nature of the product, the characteristics of the jelly and the production rates required. All the forming techniques that have been tried out derive from those used for the completely liquid or completely solid state.

In this section, we first review the advantages of using semi-solid jellies in a shaping operation. We will then look at the various techniques involved, with particular emphasis on those currently undergoing industrial development.

Finally, we look at the problems posed by shaping and post-forming properties.
