A material's ability to interact with water molecules.
Hydrocolloid; hydrocolloïde
Water-soluble macromolecules that modify rheological behavior in aqueous solution. They generally impart a particular texture, which is reflected in the sensory experience.
Oligomer; oligomer
Molecule made up of a small number of monomer units (from two to a few dozen).
Plasticizer; plasticizer
Molecule added to a material to lower its glass transition temperature and thus make it more flexible and easier to handle.
