2. Polysaccharide assay methods

2.1 Starch polysaccharide assay

Starch raw materials include corn, sorghum, wheat, tapioca and rice.

From an economic point of view, starch offers two advantages:

  • for human and animal nutrition, in which it plays an essential role; in particular, it is the main component of flour;

  • for industry, which transforms it by physical, chemical or biological processes into specific starches (modified starch, cationic starch, anionic starch, etc.) and a number of by-products, such as glucose syrups, maltodextrins, mannitol, ethanol and sorbitol.
