5. Illustrative results of emulsion characterization

Emulsions are media with deformable phases that can be homogeneous or heterogeneous, and whose droplet size distributions can vary over time. So, much more than for powders, on-line control of the particle size distribution of emulsions (which are often concentrated) is fundamental to the optimization and development of new products and processes. Indeed, emulsion particle size is very often used as a quality criterion in various fields of application. Coupled with process engineering know-how, it enables optimization of both the product and the manufacturing process: batch or continuous.

To illustrate the application of our technology to emulsion characterization, we have chosen as an example a food-grade emulsion (sunflower oil/water+surfactant) batch-formed at 40% and 60% oil concentration
