2. Preserving agricultural raw materials

2.1 Ripening of climacteric fruits

During its life cycle (on its support), a climacteric fruit emits a peak of ethylene (senescence hormone) which corresponds to its ripening.

Many plants are subject to this physiological phenomenon, which causes tree leaves to turn yellow in autumn and eventually fall off. The concentration of this hormone in the plant is extremely low. Cut off from its support, the plant is deprived of its ethylenic crisis, which on the one hand halts its ripening process (other alteration phenomena come into play) and on the other hand can be a disadvantage, as in the case of bananas, which cannot acquire their organoleptic qualities without artificial stimulation of the climacteric peak.
