ABSTRACT

This sheet, which concerns salmon, whether wild or farmed, raises many problems, in terms for the first of an endangered species, and for the second of gigantic and unbridled industrialization. Its purpose is to make a distinction between, on the one hand, the obscure points of the giants of the sector and, on the other hand, the new avenues making it possible to obtain farms that respect the environment and the quality of the products it offers to millions of consumers.

 INTRODUCTION

The "salmon" theme, particularly salmon farming, which is mostly marine and sometimes terrestrial, is a complex one to grasp, given the many and varied opinions on the subject, and the colossal financial, environmental and societal stakes involved. The days of abundant wild salmon are long gone! This article aims to approach the subject as objectively as possible, leaving it up to each and every one of us to form our own opinion and then either trust the operators in the industry, or, on the contrary, banish salmon from our plates... Unfortunately, fish is no exception in the unbridled industrialization of certain foodstuffs on the planet. Some, like the Norwegian tycoons, will argue that this industrialization and its sometimes disastrous consequences for the environment, the fish and those who eat them, are a necessary evil if we are to feed 9 billion people by 2050... It has to be said that some operators have worked hard to ensure the well-being of salmon, the quality of their feed and to limit the deleterious effects of intensive farming. But is this never-ending race for maximum profit really reasonable?
