1. Basic ingredients used in mixes

The list of conceivable ingredients for the wide variety of products that can be manufactured is very extensive, ranging from a minimum of five to over twenty for composite products (multilayers, markers, coulis, etc.) (figure 1 ). In fact, the choices made for each of them will correspond to levels of quality adapted to their market positioning, from entry-level products to top-of-the-range frozen desserts with little expansion and made exclusively with natural ingredients and therefore without additives.
