1. Enzymatic properties of transglutaminase
Transglutaminase is responsible for acyl transfer, deamidation, and cross-linking of the intra- or inter-chain glutamine peptide fragment, which is the acyl donor, and the lysine peptide fragment, which is the acyl acceptor. Transglutaminase catalyzes peptide bonds between glutamine and lysine residues (Figure 1 ).
