8. Maple syrup substitutes

The alternatives to maple syrup are many and varied, and are derived from the exudates of trees, tubers, roots, stalks or canes, flowers, fruits and cereal seeds which, after various treatments, produce syrupy sweet liquids known as syrups.

8.1 Syrups from the concentration of sweet plants

  • Birch syrup: made from raw birch sap (Betula papyrifera), which contains less sugar than maple sap (0.5-1.7%), with lower yields and higher costs. In fact, 1 L of syrup requires around 100 L of birch sap, compared with 40 L for maple sap. The flavor of birch syrup is different from that of maple syrup, and complex, with notes of balsamic vinegar, molasses and coffee.
