3. First transformation
Once harvested, the coffee cherries undergo a whole series of transformations to arrive at the coffee-beverage cup. These various stages require equipment of varying degrees of sophistication. But, whatever the tools used, we must never lose sight of the fact that the important thing is the product and its evolution. This is what we will try to show in the following paragraphs .
